Serves 4
1 Tbsp sesame oil, divided
5 garlic cloves, chopped
3 Tbsp ginger, chopped
1/2 tsp ground turmeric
1 cup red onion, sliced thin
2 cups mushrooms, sliced thin
2 cups sweet potatoes, sliced thin
2 cups of cooked brown rice or cauliflower rice
2 Tbsp of coconut aminos
1 Tbsp of rice vinegar
1 tsp of sea salt
1/2 tsp of black pepper
1/4 cup cilantro, chopped
1/4 cup basil, chopped
*optional mix-ins – cooked lentils, sprouts, peas, chicken
How to Prepare
In your largest skillet, heat 1/2 Tbsp of sesame oil and lightly saute the garlic, ginger, turmeric and red onion for 2 minutes.
Add the mushrooms and saute until browning, about 3 minutes. Add the sweet potato and mix well. Add 2-3 Tbsp of water and cover. Let it cook for 3-4 minutes or until tender.
Transfer 3/4 of the veggies to a bowl. Add the cooked rice to the remaining veggies in the skillet along with the remaining sesame oil. Add the coconut aminos, vinegar, salt and pepper. Stir to coat.
Let cook uncovered for 2-3 minutes or until rice is beginning to crisp up a bit. Add any other mix-ins or leave as is.
Add the veggies from the bowl back to the skillet and heat through.
Stir in the cilantro and basil. Serve immediately and enjoy.
