Zucchini Pizza Bites

Recipe

Serves 6 

2 large zucchinis

½ cup (120ml) tomato sauce

1 tsp. dried oregano

1 cup (225g) plant-based  mozzarella cheese, shredded (We like Miyokos)

4 tbsp. plant-based parmesan cheese, grated

Cooked Bacon (optional)

How to Prepare

Preheat the oven to 430°F (220°C). Line a baking sheet with baking paper.

Cut the zucchini into ¼ inch thick slices and arrange on the baking sheet. Top the zucchini slices with the tomato sauce, oregano, and cheese.

Place the baking sheet into the oven and bake for 5-7 minutes or until the zucchini is tender.  Top with optional cooked bacon. Then broil (grill) the zucchini for 5 minutes, or until the cheese has melted.
