Recipe

Serves 8

11.5 oz. (325g) pumpkin puree (recipe here or store-bought)

2 cloves garlic

8.4 oz. (240g) canned butter beans, drained

8.4 oz. (240g) canned chickpeas, drained & rinsed

2 tbsp. Tahini or almond butter

1 tbsp. maple syrup

1 tsp. ground cumin

1 tsp. paprika

1.7 fl oz. (50ml) lemon juice

How to Prepare

Add pumpkin puree, chickpeas, butter beans, garlic, tahini or almond butter, maple syrup, cumin, paprika, lemon juice, to a blender.



Season with salt and blend until smooth. Serve immediately or chill.

Serving suggestion: to serve, sprinkle with 1 tbsp pumpkin seeds.
