Serves 12
1.6 oz. (45g) dried apricots
0.9 oz. (25g) desiccated coconut
4 oz. (115g) porridge oats
2.1 oz. (60g) jumbo oats
5½ tbsp. maple syrup
2 tbsp. coconut oil
How to Prepare
Preheat the oven to 400°F (200°C). Line a baking tray with parchment.
In a large bowl, mix apricots, coconut, and oats.
In a saucepan, melt together coconut oil, and maple syrup over medium heat until gently bubbling. Pour the warm mixture over the dry ingredients and mix well.
Press the mixture evenly into the tray. Bake for 12-14 minutes until golden. Cool before cutting into bars.
