Makes 16 Squares
3.5 oz. (100g) plant-based unsalted butter, room temperature, or coconut oil
3.5 oz. (100g) mixed dried fruit & nuts
3.5 oz. (100g) porridge oats
3.5 oz. (100g) gluten-free self-raising flour
3.5 oz. (100g) maple syrup
How to Prepare
Preheat the oven to 350°F (180°C).
Line a deep 8-inch (20 cm) square baking tin with parchment paper and lightly oil it.
Pulse butter, dried fruit and nuts, oats, and flour in a food processor until combined.
Add maple syrup and pulse until fully incorporated.
Press the mixture evenly into the prepared tin.
Bake for 15-20 minutes until golden.
Remove from the oven, score into 16 squares, and let cool in tin for 5 minutes.
Transfer to a wire rack and cool completely before serving.
