Recipe
Serves 2
5.2 oz (150g) basmati rice
15 oz (450ml) boiling water
2 tbsp (1 oz / 30ml) rice wine
2 tbsp (0.5 oz / 15ml) oyster sauce
2 tbsp (0.5 oz / 15ml) coconut aminos
1 tbsp (0.5 oz / 15ml) sriracha
2 tsp (10ml) sesame oil
2 cloves garlic, minced
2 large salmon fillets (150–200g each)
2 fried eggs (optional)
How to Prepare
Rinse and soak the rice: Place the rice in a bowl, cover with cold water, and stir. Soak for 10 minutes, then drain and rinse until the water runs clear.
Prepare the liquid: In a separate bowl, whisk the boiling water with rice wine, oyster sauce, coconut aminos, sriracha, sesame oil, and minced garlic.
Cook the rice: Pour the mixture over the rice in a saucepan. Bring to a boil over medium heat.
Add salmon: Nestle the salmon fillets on top. Cover with a lid, reduce heat to low, and simmer gently for 20 minutes, or until the liquid is absorbed and the salmon is cooked through.
Serve: Top with fried eggs if desired, and enjoy a warm, flavorful, nutrient-rich meal.
Suggested serving: chopped green onion and a drizzle of chili oil.
