Serves 8
6.3 oz. (180g) Medjool dates (about 10), pitted
2.3 oz. (65g) almond butter
1.95 oz. (55g) almonds
1.4 oz. (40g) hemp protein powder
2½ tbsp. maple syrup
1 oz. (30g) freeze-dried blueberries
How to Prepare
Add the almonds to a food processor and pulse until finely crushed.
Add the dates, almond butter, hemp protein, date syrup, and freeze-dried blueberries. Pulse until the mixture is fully combined and sticky.
Scoop about 2 tbsp of the mixture and roll into balls. Repeat with the remaining mixture to make 8 balls.
Refrigerate for at least 1 hour to firm up before serving.
Storage: Store in an airtight container in the refrigerator for up to 5 days.
