Recipe
SALAD
1/3 cup raw walnuts halves
2 cups green leaf lettuce, loosely packed
2 cups arugula, loosely packed
2 apples, peeled & thinly sliced
1/4 red onion, thinly sliced
2 Tbsp dried cranberries (optional)
DRESSING
juice of 1 large lemon
1 Tbsp pure maple syrup
pinch of sea salt
pinch of black pepper
3 Tbsp extra virgin olive oil
How to Prepare
1.) Preheat oven to 400F and line a baking sheet with parchment paper. Spread the walnuts out evenly and bake for 8-10 minutes or until deep golden brown.
2.) While walnuts are toasting, prep all the salad ingredients and add them into a large bowl.
3.) Prepare the dressing by adding all ingredients to a jar and shaking it vigorously to combine. Taste and adjust flavor as needed.
4.) Add the walnuts to the salad and top with dressing. Toss to combine and serve immediately
