Recipe

Meatballs:

1 lb. (450g) ground turkey breast

1 egg

2 oz. (56g) gluten-free breadcrumbs

½ red onion, minced

2 cloves garlic, minced

2 tbsp. fresh mint, finely chopped

½ tsp. dried oregano


Bowls:

10.5 oz. (300g) gluten-free dry orzo

5 oz. (140g) cherry tomatoes, halved

¼ cucumber, diced

¼ red onion, sliced

fresh mint, to serve

How to Prepare

Preheat the oven to 350°F (175°C). Line a baking sheet with parchment. Mix all meatball ingredients together, adding 1 tsp. salt and black pepper. Form into 2-tbsp. sized balls (16 meatballs). Bake for 14-16 minutes until fully cooked.



Cook orzo according to package instructions. Drain and toss with 2 tbsp. olive oil.



In a bowl, combine cherry tomatoes, cucumber, and red onion. Season with salt and pepper.



Assemble bowls with orzo, salad, meatballs, and tzatziki. Garnish with mint.
