Serves 4
1 tablespoon coconut oil
4 salmon fillets
1 ½ tablespoons dry barbecue rub seasoning (no sugar or salt added)
sea salt, to taste
2 tablespoons water
¼ cup chopped fresh parsley
How to Prepare
Add oil to a large skillet over medium heat. When hot, add the salmon and season the tops with dry rub and salt.
Cook for 5 minutes on one side, then flip fillets over. Drizzle the tops with water, then cook 2-5 minutes more, depending on thickness of fillets, until just cooked through in the center.
Serve garnished with parsley, then enjoy with your favorite side dish.
