2 teaspoons coconut oil
1 large gluten-free tortilla (We like Siete)
2 eggs, scrambled
1 scallion, thinly sliced
3 slices vegan cheese
¼ cup jarred organic salsa
¼ cup chopped red bell pepper
Optional sausage links, chopped (cooked according to package directions)
How to Prepare
Heat oil in a large skillet over medium heat. When hot, add the tortilla. On one half of the tortilla, layer scrambled eggs, scallions, bell pepper,cheese and cooked sausage . Fold the other half of the tortilla over the filling.
Cook on one side for 2 to 3 minutes or until golden brown underneath, then carefully flip over. Cook 2 to 3 more minutes or until the other side is golden brown and cheese is melted. Slice into triangles and serve with salsa.
