Makes 6
1 tsp. olive oil
1 small onion, diced small
1 large garlic clove, chopped
1 tsp. fennel seeds
1 lb. lean ground turkey
1 tbsp. red wine vinegar
1 tbsp. chives, chopped
¾ tsp. paprika
pinch of nutmeg
salt & black pepper

How to Prepare
Heat the olive oil in a nonstick skillet over medium-low heat and cook the onion and garlic for 4-5 minutes. Add the fennel seeds and toss for a minute until fragrant. Remove the pot from the heat, place the mixture in a medium bowl, and set aside to cool slightly.
Add the ground turkey, red wine vinegar, chives, paprika, and nutmeg to the bowl, season with salt & pepper, and combine. Form the mixture into 6 patties and cook in the skillet over medium-low heat for 3 minutes on each side until the patties have browned. Then, reduce the heat to low, cover with a lid, and continue cooking until the patties have cooked through.
