The sweetness of the cantaloupe pairs perfectly with the coolness of the cucumbers, and the lime dressing gives it a zesty kick. 1 large cantaloupe, balled with a scoop
1 large cucumber, cut into thin ribbons
juice of one lemon or lime
2 Tbsp filtered water
pinch of sea salt
10 basil leaves, coarsely chopped
How to Prepare
1) Using a melon baller, create as many balls from the cantaloupe as possible and add them to a large salad bowl.
2) Cut the cucumber into thin ribbon strips with a knife or mandoline slicer. Add to the bowl.
3) Combine the lemon juice, water and salt in a small bowl and whisk to combine.
4) Add the lemon mixture and basil to the fruit and toss to combine.
