Recipe

Serves 6

17 oz. (480g) chickpeas, drained & rinsed

1 cucumber, chopped

1 red bell pepper, chopped

½ red onion, thinly sliced

2.6 oz. (75g) pitted kalamata olives, halved

3 oz. (85g) vegan feta, crumbled

6 servings of Tahini Dressing (recipe here)

How to Prepare

In a large bowl, combine the chickpeas, cucumber, bell pepper, onion, olives, and feta. Season with salt and black pepper.

Pour the Tahini Dressing over the salad and toss to coat just before serving.
