Chocolate Zucchini Muffins

1-1/2 cups gluten free flour blend

1/2 cup dutch-processed cocoa powder

1 tsp baking powder

1/2 tsp sea salt

1 cup unsweetened almond milk

1/4 cup melted coconut oil

2 Tbsp ground flaxseeds

3/4 cup organic coconut sugar

1 tsp pure vanilla extract

1 cup lightly packed grated zucchini

3/4 cup vegan chocolate chips

How to Prepare

Preheat oven to 350F degrees and line a standard muffin pan with liners. Spray lightly with oil so they don’t stick.

In a large bowl, add the flour, cocoa, baking powder and salt. Whisk well to combine.

Make sure the zucchini has been drained of any excess water. Then in another medium bowl, whisk together the milk, flaxseeds, sugar, and vanilla. Stir in the zucchini.

Add the wet mixture to the dry and stir until combined. Do not over-mix. Fold in the chocolate chips and save some for on top.

Divide the batter among the muffin cups, filling about 3/4 way full. Then sprinkle the extra chocolate chips on top.

Bake for 20-25 minutes or until a toothpick comes out clean.

Cool for about 10 minutes then enjoy!
