Recipe

Serves 8

​​5.3 oz. rolled oats

½ tsp. ground cinnamon

1 tsp. baking powder

1 large egg

4 tbsp. honey

8 fl oz. almond milk, unsweetened

5.6 oz.  shredded zucchini, moisture squeezed out

4 tbsp. chocolate chips

How to Prepare

Preheat the oven to 350°F. Line a muffin tray with paper or silicone liners.

Place all the ingredients into a large bowl and mix to form a muffin batter. Spoon the muffin batter equally into each of the 8 muffin liners.

Place the tray into the hot oven and bake for 20-25 minutes, until lightly golden.

Remove the muffins from the oven and place on a wire rack to cool completely before serving.

Store the muffins in an airtight container.
