Recipe
1 head cauliflower
1/2 cup cilantro, fresh, finely chopped
1/2 cup red onion, finely chopped
1/4 cup bell pepper, yellow, finely chopped (green for WILDFIT spring)
1 Tbsp olive oil
2 tsp sesame oil
salt, to taste
pepper, to taste
Scallions for garnish
How to Prepare
Remove outer leaves and stem from cauliflower and grate using a box grater. You can also use a food processor and process florets until the cauliflower resembles rice.
Chop cilantro, onion, and bell pepper.
Add the chopped cauliflower and continue cooking until soft and translucent.
In a large skillet over medium heat, add both oils and sauté onion and bell pepper in until soft and fragrant.
Place the cooked cauliflower in a bowl and toss with cilantro before serving.
Add salt and pepper to taste.
