Coconut Lime No Bake Cookies

One of my favorite things to do in the summer is bake. But, who wants to turn on the oven when it’s already so hot outside? These coconut lime no bake cookies are a great alternative! They’re quick and easy to make, and they’re perfect for a summer get together. Plus, they’re vegan and gluten free, so everyone can enjoy them!

Recipe

2 cups desiccated unsweetened coconut

1 cup almond flour

1/3 cup pure maple syrup

1/3 cup melted coconut oil

4 Tbsp fresh lime juice

How to Prepare

In a food processor, using the S blade attachment, add all the ingredients.

Process the mixture for 1 minute then stop and scrape down the sides. Repeat for a few more minutes until all ingredients are soft and come together in a dough.

Roll 25 small cookie balls with your hands and place each one on a pan lined with parchment paper.

Flatten each ball into a cookie shape then place the pan into the freezer for 5-10 minutes to set.

Remove and enjoy the Coconut Lime No Bake Cookies immediately or store in an airtight container in the fridge for up to 3 weeks.
