2 tablespoons coconut oil
1 pound medium raw sea scallops, cleaned well
Juice of 1 small lime
1 tablespoon curry powder (salt-free)
Sea salt, to taste
1 scallion, thinly sliced
How to Prepare
Add coconut oil to a large skillet over medium-high heat. When hot, add scallops, lime juice, and dry seasonings.
Saute for 3 minutes, then flip scallops over and cook 1 minute more or until just barely cooked through (do not overcook or they will be rubbery).
