Makes about 1 ½ cups
4 cups cauliflower florets
2 tablespoons coconut oil
2 tablespoons curry powder
Sea salt and black pepper, to taste
⅓ cup extra virgin olive oil
Juice of 1 lemon
2 garlic cloves
1 bunch cilantro, finely chopped
How to Prepare
Preheat the oven to 400 degrees F.
Add the cauliflower to a large bowl. Coat with coconut oil. Season with curry, salt, and pepper. Bake for 20 to 25 minutes until tender. Remove from the oven and set to cool.
