1 tablespoon coconut oil
1 large onion, chopped
2 garlic cloves, chopped
1-inch piece of ginger, grated or finely chopped
1 head broccoli, chopped into bite-sized pieces
1 16-ounce package frozen spinach
1 14-ounce can organic coconut milk
4 cups organic vegetable broth
1 tablespoon curry powder
How to Prepare
