Detox Salad

Detox salads are all the rage right now. And for good reason! They are a great way to cleanse your body and reset your metabolism. This detox salad recipe is one of my favorites, because it is so delicious and satisfying. It’s perfect for a quick and healthy lunch or dinner. Enjoy!


Serves 2

1 avocado, peeled, cut into cubes

2 bunches parsley, roughly chopped, around 1 oz. (30g)

¼ cup (46g) cooked quinoa

½ cucumber, cut into cubes

½ zucchini, cut into cubes

1 small red onion, finely diced

1 tsp. olive oil

juice of 1 lemon

¼ cup (30g) mixed seeds and nuts, to garnish

How to Prepare

•Add all ingredients to a high powered blender, (We like the Vitamix).

•Blend on high until smooth.
