Recipe
Serves 2
2 cups mixed greens
1 cup quinoa
4 boiled eggs, chopped
2 heaping tablespoons of mayonnaise, vegan mayonnaise OR plain dairy-free yogurt (We like Primal Kitchen)
1 cup purple cabbage, thinly sliced
2 celery ribs, chopped,
½ cup chopped olives
½ cup sliced red onion
1 teaspoon dried basil
sea salt and black pepper to taste

How to Prepare
Place mixed greens in a serving bowl and set to the side. In a separate bowl, mix the remaining ingredients. Stir well and serve on top of the mixed greens.
