Recipe

2 cups quinoa, cooked

1 cup pomegranate seeds

1/3 cup pistachios, chopped

3 cups baby spinach

2 celery stalks, diced

1/4 cup red onion, finely diced

Dressing

3 tbsp olive oil

2 tbsp lemon juice

1 tsp honey (optional)

Salt and pepper
