Recipe
12 fl oz. (360ml) unsweetened almond milk
2 tsp. apple cider vinegar
½ tsp. vanilla extract
8.5 oz. (240g) gluten-free all-purpose flour
1 tbsp. baking powder
2 fl oz. (60ml) melted coconut oil
berry compote, for serving (optional)

How to Prepare
Mix milk with 2 tsp. apple cider vinegar and vanilla extract in a small bowl. Let it sit for 5 minutes.
In a large bowl, sift flour, baking powder, and ½ tsp. salt.
Add melted oil, and the milk mixture. Mix gently until just combined.
Preheat the waffle maker to medium heat.
Scoop 4 fl oz. (120ml) batter into the center. Close and cook according to the instructions of your waffle maker.
