How to Prepare
In a large bowl, grate garlic and zest 1 lemon. Halve both lemons and squeeze 2 fl oz. (60ml) juice into the bowl. Add 4 tbsp. olive oil, and season with salt, and pepper. Stir to combine.
Add quinoa, cucumber, bell pepper, parsley, and olives. Mix well.
