Recipe

2 cups coconut yogurt

1/4 cup pure maple syrup

2 tsp vanilla extract

1/8 tsp salt

1/4 cup oranges, cut

1/4 cup apple, thinly sliced

1/4 cup peaches, thinly sliced

3/4 cup granola

How to Prepare

Line a baking sheet with parchment paper and set aside.

Place the yogurt, sweetener, vanilla and salt in a bowl; whisk to combine.

Pour onto the baking sheet and use a rubber spatula to spread onto an even layer about 1/2″ thick.

Scatter the fruit & granola evenly over the yogurt.

Freeze uncovered until solid. About 4 hours. Pick up the bark by lifting up the parchment paper. Place onto a cutting board and break it into irregular pieces.

Serve immediately or keep frozen in an airtight container or freezer bag.
