3 cups frozen California blend
1 cup frozen chopped green beans
1 cup frozen peas
½ cup water
1 pound gluten-free spiral pasta, cooked to package directions
1 jar pimentos, drained
2 15-ounce BPA-free cans navy beans, drained and rinsed
2 cups organic vegan pesto
3 scallions thinly sliced
How to Prepare
Heat a large pot over medium heat. When hot, add frozen veggies and water. Bring to a simmer, and cook for 5 minutes or until heated through and al dente. Strain very well to drain all liquid, then return to the pot and reduce heat to medium-low.
Gently stir in cooked pasta, pimentos, beans, and pesto to combine. Serve in bowls topped with scallions.
