Serves 4

10.5 oz. (300g) gluten-free penne pasta

9 oz. (250g) broccoli, cut into small florets

1 onion, finely chopped

2 cloves garlic, crushed

9 oz. (250g) cooked ham, cut into chunks

5 fl oz. (150ml) oat cream

1 tbsp. Dijon mustard

2.5 oz. (70g) plant-based cheddar cheese, grated

How to Prepare

Cook the pasta according to package instructions, adding the broccoli florets for the final 4 minutes of cooking. Drain and set aside.



Meanwhile, heat 1 tbsp oil in a large pan over medium heat. Add the onion and cook for 5 minutes until softened. Stir in the garlic and cook for 1 minute more.



Add the ham, oat cream, and mustard. Bring to a gentle boil, then reduce the heat to a simmer.



Add the drained pasta and broccoli to the pan. Stir in the grated cheddar until melted and everything is well coated in the sauce.



Serve warm, with extra black pepper.
