Serves 4
1 tablespoon coconut oil
1 large onion, chopped
4 large carrots, chopped
4 celery stalks, chopped
1 8-ounce package sliced mushrooms
2 tablespoons poultry seasoning
Sea salt and black pepper, to taste
4 chicken breasts, cut into strips
1 15-ounce can great northern beans, drained and rinsed
1 15-ounce can chickpeas, drained and rinsed
1 32-ounce package vegetable broth
2 bunches Swiss chard
How to Prepare
Place a large soup pot over medium heat. Add coconut oil. Once the oil melts, add onion, carrot, and celery. Sauté for 3 minutes. Add mushrooms and chicken. Season with poultry seasoning, sea salt, and black pepper. Sauté for an additional 3 minutes. Add northern beans, chickpeas, and broth. Stir well and cover. Simmer for 15 minutes on low heat. Remove the cover and add chard. Stir well until the chard is wilted.
