2 tablespoons coconut oil
1 pound pork tenderloin, sliced into 12 medallions
1 tablespoon herbs de provence
1 teaspoon paprika
sea salt, garlic powder, and black pepper, to taste
½ cup chicken broth
¼ cup chopped fresh parsley

How to Prepare
Add oil to a large skillet over medium heat. When hot, add pork medallions and season with dry seasonings, using tongs to turn medallions over to coat.
