
If you’re looking for a weeknight meal that’s easy to prepare and doesn’t require a lot of ingredients, look no further than herbed pork medallions. This dish is simple to make but packs big flavor, thanks to the herbs and spices used. Serve with some roasted vegetables or salsa and you’ve got a complete meal that everyone will love.

Serves 4
2 tablespoons coconut oil
1 pound pork tenderloin, sliced into 12 medallions
1 tablespoon herbs de provence
1 teaspoon paprika
sea salt, garlic powder, and black pepper, to taste
½ cup chicken broth
¼ cup chopped fresh parsley
How to Prepare
Add oil to a large skillet over medium heat. When hot, add pork medallions and season with dry seasonings, using tongs to turn medallions over to coat.
Sear medallions on one side for 4 minutes or until golden brown, then flip medallions over. Add chicken broth and parsley to the pan. Cook for 3 to 4 minutes more or until pork is just cooked through.
Enjoy served with your favorite sides.
