High Protein Southwest Chicken Salad

Enjoy crunchy and colorful cucumbers, corn, beans and an amazing homemade cilantro dressing; everything comes together in minutes to provide you with a powerhouse meal that will boost your energy levels while also helping to keep you satisfied until dinnertime.

Recipe

For the dressing:

2 servings of spicy cilantro sauce (see recipe here)

For the salad:

2 tomatoes, diced

½ cucumber, diced

4 tbsp. sweetcorn, drained

½ jalapeño pepper, sliced

1 cup shredded grilled chicken breast

½ avocado, sliced

8 tbsp. black beans, drained

2 cups  romaine lettuce, chopped

How to Prepare

Layer the ingredients into a 16-ounce mason jar in the following order: spicy cilantro sauce, tomatoes, cucumber, sweetcorn, jalapeño, chicken breast, avocado, black beans, romaine lettuce.

Store in the refrigerator for 2-3 days. When ready to serve, tip all the ingredients into a bowl, stir to combine and enjoy your High Protein Southwest Chicken Salad!
