Serves 4

2 pork tenderloins (about 2-3 lbs total) (900-1350g)

1 cup sugar-free BBQ sauce (240ml, divided)

1/2 cup chicken broth (120ml)

2 tbsp apple cider vinegar (30ml)

1 tbsp monk fruit (optional)

2 tsp smoked paprika (4g)

1 tsp garlic powder (2g)

1 tsp onion powder (2g)

1 tsp salt (5g)

1/2 tsp black pepper (1g)

1/2 tsp cumin (1g)

How to Prepare

Mix all dry seasonings in a small bowl and rub all over pork tenderloins.

Add chicken broth, apple cider vinegar, monk fruit, and 1/2 cup BBQ sauce to Instant Pot.

Place seasoned pork tenderloins in the pot.

Pressure cook HIGH for 25 minutes, then natural release for 10 minutes.

Remove pork and shred with two forks.

Stir in remaining 1/2 cup BBQ sauce with the shredded pork.

Serve immediately or keep warm on sauté mode with coleslaw
