Italian Kale Slaw

Italian Kale Slaw

This Italian Kale Slaw is proof that eating healthy doesn’t mean sacrificing flavor—or crunch. Made with a hearty kale slaw mix, tangy sun-dried tomatoes, sliced almonds, and plant-based parmesan, it’s tossed in a vibrant lemon-infused olive oil dressing that brings everything together with Mediterranean flair.

Kale is a nutrient powerhouse, loaded with fiber, vitamin K, and antioxidants that support heart health, digestion, and healthy inflammation response. Sun-dried tomatoes offer concentrated flavor and a boost of lycopene, while almonds contribute plant-based protein and good fats to keep you satisfied longer. The plant-based parmesan adds a savory finish without dairy, making this slaw light yet deeply satisfying.

Whether you’re serving it as a refreshing side, a light lunch, or layering it into wraps or grain bowls, this slaw delivers on both nutrition and convenience. Just toss, let it sit to soften, and enjoy every bold, zesty bite.

Recipe

1 bag kale slaw mix (10-12 oz)

1/4 cup sun-dried tomatoes, chopped

1/4 cup plant-based parmesan cheese, shaved

2 tbsp sliced almonds

1/4 cup store-bought lemon olive oil dressing  (We like Strompolos Lemonaki)
