2 Bunches kale, de-stemmed and shredded
1/4 tsp salt
1 tsp olive oil
3 lemons, juiced
1/2 small red onion, diced
1/2 cucumber, diced
1 bell pepper, orange, diced (or other color pepper)
1/2 cup tahini sesame seed paste
2 cloves garlic, crushed
2 Tbsp olive oil
1/4 cup warm water plus more if needed
1/2 tsp salt
1/2 tsp pepper
Pumpkin seeds for garnish
How to Prepare
To shred kale, bunch together a few leaves and slice thinly.
Dice onion, cucumber, and pepper.
Crush and chop garlic [or press].
Add kale to a large bowl with 1 tablespoon lemon juice and salt. Massage kale for about 3 minutes or until soft and bright green.
Add onion, cucumber, and pepper to kale – toss well.
Add tahini, garlic, 1/4 cup + 2 tablespoons lemon juice) to the food processor or blender. Process until smooth then while blending add olive oil in a steady stream. Add more water if needed to thin. You could also whisk instead of blending.
Season dressing with salt and pepper.
Drizzle salad with dressing and toss well before serving.
Sprinkle with pumpkin seeds
