Serves 4
1 bunch cilantro, minced
½ bunch parsley, minced
3 garlic cloves, minced
1 bunch scallions, roughly chopped
¼ cup apple cider vinegar
¼ cup olive oil
Sea salt and black pepper, to taste
1 pound ground beef
1 egg
½ cup almond flour
½ tablespoon ground cumin
½ tablespoon garlic powder
½ tablespoon turmeric powder
½ tablespoon ground allspice
1 tablespoon coconut oil
How to Prepare
To make the sauce, add cilantro, parsley, garlic cloves, scallions, vinegar, olive oil, sea salt, and black pepper to a blender. Blend until almost smooth. Set to the side until ready to serve.
Next, add beef, egg, almond flour, cumin, garlic powder, turmeric, allspice, salt, and pepper to a mixing bowl. Mix well and form into 1-inch balls. Place a large skillet over medium heat. Add coconut oil. Once the oil melts add meatballs. Brown on all sides, then cover the pan for about 5 minutes to ensure the center cooks all the way through.
Serve the meatballs with the chimichurri sauce.
