
Green, herby pesto is the perfect topping for lamb chops – it’s simple to make and adds a ton of flavor. Serves 4
2 coconut oil
8 small lamb chops (about 1-inch thick)
sea salt and black pepper, to taste
½ cup organic pesto
1 large lemon, sliced into 8 wedges
How to Prepare
Add oil to a large skillet over medium heat. When hot, add lamb and dry seasonings. Saute chops until a dark golden brown color forms underneath, about 5 minutes. Flip over then cook until the same color forms on the other side.
Top chops with pesto, then use tongs to turn chops over a few times to coat. Serve lamb chops drizzled with the pan sauce and garnished with lemon wedges. Enjoy with your favorite sides.
