Recipe

Serves 1

1 gluten-free tortilla (We like Siete)

1 can (5 oz) salmon, drained and flaked

1/4 medium avocado, sliced

1/2 cup thinly sliced cucumber

1 cup microgreens

1 tsp olive oil

1 tsp lemon juice

1/4 tsp dried dill

Salt and pepper to taste

How to Prepare

Warm the tortilla slightly for easier folding.

In a small bowl, combine flaked salmon with olive oil, lemon juice, dill, salt and pepper.

Spread salmon mixture over the center of the tortilla.

Layer with avocado slices, cucumber slices, and microgreens.

Fold in the sides of the tortilla and roll it up tightly.

Cut in half and serve.
