Recipe

1 cup full-fat coconut cream

1 cup soaked raw cashews (soak for at least 4 hours or overnight)

4 tbsp. honey or maple syrup

½ tsp. vanilla extract

Pinch of sea salt

6 medjool dates

How to Prepare

Drain the soaked cashews and add them to a food processor or blender along with the coconut cream, honey or maple syrup, vanilla extract, and sea salt.

Blend until the mixture is smooth and creamy.

Add the medjool dates and blend again, leaving some small chunks of dates for texture.

Pour the mixture into a freezer-proof dish or loaf pan.

Freeze for 3-4 hours until the ice cream has set.

Before serving, remove from the freezer and let it sit for 10-15 minutes to soften slightly.
