Serves 4
1 cucumber, peeled, diced
½ red onion, diced
3 tomatoes, diced
2 tbsp. parsley, chopped
2 tbsp. cilantro, chopped
2 tbsp. basil, chopped
1 tsp. dried mint
4 tbsp.lime juice
3 tbsp. olive oil
salt & pepper
How to Prepare
Place the diced vegetables into a large bowl and mix with the herbs. Drizzle over the lime juice and olive oil and season to taste with salt and pepper. Mix well and adjust the seasoning if required.
Serve immediately.
