1 cucumber, peeled, diced

½ red onion, diced

3 tomatoes, diced

2 tbsp. parsley, chopped

2 tbsp. cilantro, chopped

2 tbsp. basil, chopped

1 tsp. dried mint

4 tbsp.lime juice

3 tbsp. olive oil

salt & pepper
