Recipe
1 ¾ cup lentils, drained
1 cup sundried tomatoes, drained
½ cup artichoke, drained
1 cup spinach
½ cucumber, chopped
2 tbsp. tahini
2 tsp. apple cider vinegar
1 tbsp. coconut aminos
1 tsp. honey (optional)
How to Prepare
Prepare the vegetables and place them in a large bowl.
Mix together the dressing ingredients (tahini, vinegar, coconut aminos & honey), season with salt and pepper, and drizzle over the salad. Mix well, divide onto two plates and serve.
