With just three main ingredients—harissa paste, honey, and pork tenderloin—you get a perfectly balanced blend of smoky heat and subtle sweetness that caramelizes beautifully in the oven. Harissa, a North African chili paste, adds depth and warmth, while honey helps create a glossy, slightly sticky glaze that locks in moisture. A quick sear on the stovetop followed by a short roast in the oven makes this a weeknight-friendly dish that feels a little special.

4 tbsp. harissa paste

2 tbsp. honey

1.25 lbs. (560g) pork tenderloin, halved

How to Prepare

Preheat the oven to 375°F (190°C).



Season pork with salt and pepper, then rub with harissa and honey.



Heat 2 tsp oil over medium-high heat in an oven-proof skillet for 2 to 4 minutes per side. Place in the heated oven and roast for 8-12 minutes, until internal temp is 140-145°F (60–63°C).



Rest for 10 minutes. Slice and serve with juices.
