Sweet Potato Hash

Do you love sweet potatoes? I know I do. They are a delicious and healthy vegetable that can be eaten in so many different ways. Packed with vitamins A and C, fiber, and beneficial antioxidants, sweet potatoes are a nutritious powerhouse that can elevate any meal. One of my favorite ways to enjoy them is in a hash – a satisfying combination of crispy sweet potatoes, colorful vegetables, and perfectly cooked eggs that’s perfect for breakfast, lunch, or dinner. This Sweet Potato Hash is not only tasty, but it’s also incredibly easy to make and customizable to your preferences. The natural sweetness of the potatoes pairs beautifully with the savory spices and creamy avocado, creating a harmonious blend of flavors and textures. Plus, the protein from the eggs and healthy fats from the avocado make this a well-balanced meal that will keep you satisfied for hours.

Recipe

1 teaspoon coconut oil, divided

½ cup frozen chopped onion and bell pepper mix

1 small sweet potato, chopped

¼ teaspoon ground cumin

sea salt, garlic powder, and black pepper, to taste

2 eggs

½ avocado, chopped

2 tablespoons cilantro, chopped

How to Prepare

Add half the oil to a medium skillet over medium heat. When hot, add the onion/pepper mix, sweet potato, and dry seasonings. Cook for 10 minutes or until golden brown and tender. Transfer mixture to a serving plate and keep warm.

Return the pan to the heat and add the remaining oil. When hot, add eggs and fry to your desired doneness. Place eggs on top of plated hash.  Garnish your sweet potato hash with avocado and cilantro.
