
Do you love sweet potatoes? I know I do. They are a delicious and healthy vegetable that can be eaten in so many different ways. One of my favorite ways to enjoy them is in a hash. This Sweet Potato Hash is not only tasty, but it’s also easy to make. So, if you’re looking for a quick and healthy meal, this dish is definitely worth trying. The best part is that it’s also gluten-free. Trust me, you won’t be disappointed!

1 teaspoon coconut oil, divided
½ cup frozen chopped onion and bell pepper mix
1 small sweet potato, chopped
¼ teaspoon ground cumin
sea salt, garlic powder, and black pepper, to taste
2 eggs
½ avocado, chopped
2 tablespoons cilantro, chopped
How to Prepare
Add half the oil to a medium skillet over medium heat. When hot, add the onion/pepper mix, sweet potato, and dry seasonings. Cook for 10 minutes or until golden brown and tender. Transfer mixture to a serving plate and keep warm.
Return the pan to the heat and add the remaining oil. When hot, add eggs and fry to your desired doneness. Place eggs on top of plated hash, then garnish with avocado and cilantro.
