This Sweet Potato Lunch Box Salad is a great way to get your daily dose of vegetables, and it’s perfect for packing in your lunch box! The salad is loaded with sweet potatoes, greens, and avocado, and it’s topped with a delicious dressing. It’s a healthy and tasty lunch option!
Recipe
1 large sweet potato, cubed
1 ripe avocado
10 cherry tomatoes, quartered
2 Tbsp cashews
2 cups mixed salad greens
1 lime, juiced
2 Tbsp extra virgin olive oil
1 tsp sea salt
1/2 tsp black pepper
Optional plant based cheese
How to Prepare
Preheat oven to 350F degrees and line a baking sheet with parchment paper.
Cut the sweet potato into small cubes. Toss them in a bowl with 1/2 of the salt and a little olive oil. Place them on the sheet and bake for 25 minutes or until tender.
Mash half of the avocado and cut the other half into cubes. Put it and the cherry tomatoes in a bowl with the lime juice and cashews. Season with salt, pepper and more oil. Toss gently.
Let the sweet potato cool down and add it to the bowl as well.
Then toss with the salad greens, divide into two bowls and enjoy!
