Serves 1

1 tablespoon coconut oil

½ red bell pepper, chopped

1 clove garlic, minced

1 cup dandelion greens, chopped OR arugula

3 eggs, whisked

Sea salt and black pepper, to taste

How to Prepare

Add coconut oil to a medium skillet over medium heat. When hot, add bell pepper, garlic, and dandelion. Cook for about 3 minutes, then add whisked eggs. 

Cook to your desired firmness on both sides. Season with salt and pepper, then serve.
