How to Prepare
Heat the oil in a large pot over medium heat. Cook the ground turkey for 5-7 minutes until starting to brown. Remove from pan and set aside, reserving the juices.
To the same pan, add carrots, garlic, onion and celery. Sauté until onions are softened, about 5 minutes. Add back the cooked turkey, along with chopped tomatoes, the spices and herbs. Season to taste with salt & pepper. Stir to combine, and bring to a boil, then reduce to low heat and simmer for 45 minutes, stirring occasionally.
