Serves 2
1 can BPA-free lentil beans, drained and rinsed
1 avocado, diced
¼ cup Dressing of choice (Try our Tahini Garlic Dressing here)
1 small red onion, sliced
2 celery stalks, diced
1 cucumber, chopped
½ cup sliced strawberries
1 cup fresh blueberries
3 cups baby spinach
¼ cup flat leaf parsley, chopped
¼ cup sliced almonds or chopped nuts of your choice
Optional plant based cheese
How to Prepare
To package in mason jars, divide and layer ingredients in the order listed into two mason jars. Cover with a tight lid and refrigerate until ready to use. Immediately before eating, shake the jar gently to incorporate the dressing throughout. Eat right out of the jar or pour into a serving bowl.
