Serves 2

4 cups mixed greens

1 large tomato, chopped

½ small red onion, thinly sliced

½ bunch fresh parsley, chopped

2 cups shredded carrots

1 15-oz BPA-free can chickpeas, drained and rinsed

¼ cup dried figs, chopped

¼ cup kalamata olives

¼ cup Chili-Lime Dressing

Gluten-free pita chips, for serving 

 Omnivore Option:  6 nitrate-free deli turkey
