Recipe

Makes 12 rolls

6.1 fl oz. (180ml) unsweetened oat milk

7 oz. (200g) cultured vegan butter, room temperature (We like Miyokos)

3 tbsp. unsweetened applesauce

0.25 oz. (7g) dried yeast

10.6 oz. (300g) gluten-free all-purpose flour blend (ensure it contains xanthan gum, or add 1 tsp separately)

3 tbsp. ground cinnamon

5.3 oz. (150g) pitted dates

1 egg

How to Prepare

Heat the oat milk until warm to the touch. Remove from heat and stir in 2 tbsp vegan butter, 1 tbsp applesauce, and the yeast. Let sit for 10 minutes until slightly bubbly.

In a large bowl, combine the gluten-free flour and ½ tbsp cinnamon. Fold in the milk mixture and knead for 4–5 minutes until a soft dough forms. The dough will be softer than a traditional dough — this is normal. If too sticky, add a little more flour. Form into a ball, return to the bowl, and refrigerate for 30 minutes to firm up.

In a food processor or blender, blend the dates, remaining vegan butter, remaining applesauce, and remaining cinnamon into a smooth paste.

Roll the dough between two sheets of parchment paper into a 14 x 14 inch (36 x 36 cm) square. Spread the cinnamon date paste evenly over the surface. Roll into a tight log and pinch the seam to seal.

Cut into 12 slices approximately 1¼ inches (3 cm) thick. Place close together in a lined baking dish. Cover and let rise in a warm place for 60–90 minutes.

Preheat the oven to 375°F (190°C). Beat the egg and brush over the rolls. Bake for 25 minutes until golden on top.

Allow to cool briefly before serving.

Cut into 12 slices (about 1¼ inches / 3 cm thick). Place close together in a baking dish. Cover, let rise for 1 hour in a warm place.



Preheat the oven to 375°F (190°C). Beat egg, brush rolls, bake 25 minutes until golden. Cool briefly before serving.
