Recipe

8 fl oz. (240ml) plain coconut milk (from carton)

2 tsp. matcha powder

2 tbsp. maple syrup, divided (Optional)

½ lemon, juiced

1.7 oz. (48g) chia seeds

3.4 oz. (96g) strawberries, chopped

8 oz. (225g) unsweetened coconut yogurt

How to Prepare

In a bowl, whisk together the coconut milk, matcha powder, half of the maple syrup, and lemon juice until smooth.

Stir in chia seeds. Let sit for 5-10 minutes, then stir again. Refrigerate for at least 1 hour until set.

In a small bowl, mash strawberries with the remaining maple syrup until slightly chunky.

Layer the mashed strawberries, coconut yogurt, and chia pudding into jars.

Serve and enjoy or chill in the fridge for later!
